The Caesar was invented in Calgary in 1969 at the Calgary Inn (now the Westin). It's as Canadian as hockey and poutine, and it's one of the most satisfying cocktails in existence. Here's the recipe.
1.5 oz vodka, 4 oz Clamato juice, 2 dashes Worcestershire sauce, 2 dashes hot sauce (Tabasco or Frank's), pinch of celery salt, pinch of black pepper, lime juice, ice. Garnish: celery stalk, lime wedge, pickled bean.
Rim a tall glass with celery salt (run a lime wedge around the rim, dip in celery salt). Fill with ice. Add vodka, then Clamato. Add Worcestershire, hot sauce, pepper, and a squeeze of lime. Stir gently. Garnish with celery, lime, and whatever else you want (pickled bean, shrimp, bacon — Calgarians don't hold back on garnishes).
Scale everything by 8 for a pitcher that serves 8. Mix everything except the ice in a pitcher, chill in the fridge, and pour over ice when ready. Rim glasses individually.
Extra-spicy Clamato exists and it's worth trying. Walter's Caesar Mix is a premium upgrade over standard Clamato. Adding a splash of pickle brine adds depth. Some people use gin instead of vodka — it's called a "London Fog" and it's surprisingly good.
