When hosting in summer, batching cocktails is the smartest move. Make a big pitcher before guests arrive, keep it cold, and let people serve themselves. Here are three that scale perfectly.
1 bottle of red wine (or rosé for summer), 1 cup brandy, 0.5 cup triple sec, 2 cups orange juice, sliced oranges, lemons, and berries. Mix everything, refrigerate for 2–4 hours. Serves 6–8. Add sparkling water before serving for fizz.
2 cups blanco tequila, 1 cup fresh lime juice, 0.75 cup Cointreau, 0.5 cup simple syrup. Mix and chill. Pour over ice in salt-rimmed glasses. Serves 8–10.
2 cups vodka, 4 cups lemonade (fresh is better, store-bought works), 2 cups sparkling water, fresh mint, sliced lemons. Mix vodka and lemonade, add sparkling and mint right before serving. Serves 8–10.
Always chill batched cocktails in the fridge — don't rely on ice to cool them. Add carbonated ingredients last. Make more than you think you need. Provide a ladle or pour spout.
