Red wine is made with dark-skinned grapes where the skins stay in contact with the juice during fermentation, giving it colour, tannins, and body. White wine is made from light-skinned grapes (or dark grapes with the skins removed) and tends to be lighter and more acidic. That's it. Everything else is detail.
Red wine shines with hearty food: steak, lamb, pasta with meat sauce, aged cheese, and rich stews. It's generally better at room temperature (not actually room temp — slightly cool, around 16–18°C). In Calgary's cold months, a glass of Cabernet or Malbec with a warm meal is hard to beat.
White wine pairs with lighter food: fish, chicken, salads, seafood, and lighter pasta dishes. Serve it chilled (7–10°C for most whites). In Calgary's summer, a cold glass of Sauvignon Blanc on a patio is the move.
