All three are sparkling wines, but they come from different places, are made differently, and taste different. Here's the breakdown.
From the Champagne region of France. Made using the traditional method (second fermentation in the bottle). Typically dry, toasty, and complex. Costs more because of the labour-intensive process and the prestige of the name. $40–150+ for real Champagne.
From the Veneto region of Italy. Made using the tank method (faster, less expensive). Lighter, fruitier, and more approachable than Champagne. The best value in sparkling wine — $12–25 gets you a great bottle.
From Spain (mostly Catalonia). Made using the traditional method (like Champagne) but with Spanish grapes. Often the best quality-to-price ratio of all three. $10–20 for a bottle that punches well above its weight.
Champagne for milestone celebrations, weddings, and when you want to make an impression. Prosecco for brunch, casual gatherings, and mimosas. Cava when you want Champagne quality without the Champagne price.
